The yogurt needs to be at room temperature, not cold from the fridge. Cold yogurt cools down the poached eggs too fast and makes the whole dish lukewarm. Take it out 15 minutes before you start cooking. For the poached eggs, the gentlest simmer gives you the best shape. If the water is boiling hard, the eggs will shred.
